Father Ted cooks up a Pancake at Messy Church

Lots of families came along on February 22nd for Father Ted’s Messy Church for Lent.

some people have been asking for our pancake recipe - so here it is:

Father Ted’s Messy Church Pancake / Drop Scone Recipe

 4 oz (100g) self raising flour

1 oz (25g) sugar

1 egg

¼ pint )approx 140ml) milk

1 oz (25g) melted butter or margarine (optional)

 Sieve together dry ingredients.

  1. Beat in the egg and then the milk.
  2. Stir in the melted butter/margarine (this is not essential, but it does help to keep the pancakes moist)
  3. Grease and warm the griddle or non-stick frying pan.  To test if it is correct heat, drop a teaspoon of the mixture on this and if it goes golden brown within one minute it is ready.
  4. Drop tablespoonfuls of the batter onto the pan.
  5. Cook for about 2 minutes then turn and cook for a further 2 minutes.
  6. Cool on a wire tray (if covered lightly with a clean cloth then they will retain their moistness.
  7. Keep in a tin for up to 24 hours. (May need greaseproof between layers to prevent sticking together.
